Mango Chutney

  • 4-8 mangos/size matters
  • 2 cups sugar (mix ½ brown, ½ raw)
  • 1 cup vinegar
  • Finger of fresh ginger, finely diced
  • 1 Medium sweet onion, finely diced
  • 2 cloves garlic, finely diced
  • 3-4 seasoning peppers, finely diced
  • I tbl olive oil

Add seasonings to taste:

Coriander, cumin, turmeric, cardamom, cloves, cinnamon, salt

  1. Bring all ingredients to a boil in a pot
  2. lower heat & simmer 45 minutes, until desired consistency

Serve warm or cold with fish, chicken, roti, on cheese Sammies
