Mango Chutney

INGEDIENTS:
- 4-8 mangos/size matters
- 2 cups sugar (mix ½ brown, ½ raw)
- 1 cup vinegar
- Finger of fresh ginger, finely diced
- 1 Medium sweet onion, finely diced
- 2 cloves garlic, finely diced
- 3-4 seasoning peppers, finely diced
- I tbl olive oil
Add seasonings to taste:
Coriander, cumin, turmeric, cardamom, cloves, cinnamon, salt
- Bring all ingredients to a boil in a pot
- lower heat & simmer 45 minutes, until desired consistency
Serve warm or cold with fish, chicken, roti, on cheese Sammies
